SIXTEEN TREES - Wild ale naturally fermented on spent Le Grand nectarines from Masumoto Family Farm - 2024 Harvest. After two previous beers conditioned on the fruit, we brewed a fresh batch of saison recipe and racked on top of the spent fruit and allowed the residual mixed culture of yeast and bacteria from previous ferments to do its magic. After 3 months on spent nectarines, we refermented the beer in cork and caged 750mL champagne bottles for three additional months for further conditioning and refinement. 5.8% ABV.
